辛竟可，清代官员，籍贯中国直隶。雍正十年壬子恩科举人，曾任福建古田县知县，期间主持修《古田县志》。1755年（乾隆20年），接替沈宗良担任台湾府诸罗县知县，负责今嘉义县、嘉义市、云林县一带政事。
